Beef tartare; on moose thigh seasoned with juniper and rosemary oil, egg63, pickled beets, roasted capers and root fruit chips

Halibut; herb tapenade and gratin Västerbotten cheese, semi-baked tomatoes and potato timbale flavored with garlic, onion and spinach. Topped with crayfish tails and cream-boiled black cabbage.

Chocolatemousse; lavored with cognac, orange and passion fruit sauce. Fresh berries and pomegranate seeds.
